Matcha Pancakes, Matcha Cookies & Matcha Itself

What better way to kick off the matcha post category than with a triple of matcha items? 4 stars.

Nishio Matcha Pancake Mix

Found at the Japanese supermarket. The directions are in Japanese, too, so if you get these and need a bit of help:

Ingredients

  • 1 bag of pancake mix
  • 2 medium-sized eggs
  • 120ml milk
  • 1 tbspn salad oil (for a milkier flavour, substitute with 1 tbspn butter)

Instructions

  1. Add pancake mix, eggs and milk and mix well. Then add salad oil and mix further.
  2. Heat a frying pan and grease it.
  3. Remove frying pan from heat and place on a wet towel, allowing it to cool slightly. Wipe off excess oil, pour pancake mix in a round shape, then return to low heat for about 2min 30sec.
  4. When bubbles begin to form on the pancake, flip and continue cooking for about 1min 30sec.

Thoughts

These turned out to be very easy to make - the pancake mix was very cooperative and practically arranged itself into perfectly round shapes on the pan.

Flavour was pretty incredible - they definitely did not skimp on the matcha powder. These were fantastic, would buy again, 100% recommend.

You can get these delightful, buttery treats at Clover Bakery & Cafe in San Jose. They also sell these amazing Mentai Masago buns and mini fresh cream strawberry shortcakes that would be a crime to miss out on.

Material Matcha

Finally, the matcha itself. I got the powder from a Kickstarter project that has long since ended, but you can still check out their business at Material Matcha. The matcha in the picture is MMU02, their balanced and well-rounded offering. Have yet to have a bad cup, and the design is certainly very elegant.
